copse. The master blender, Richard Paterson, is one of the industry’s best-loved celebrities, not one to shy from experimentation, he makes use of varying barley strains and age-old vintages, which he blends with all the talent of a modern-day alchemist.
Dalmore was founded by Alexander Matheson in 1839 and now stands as Whyte & Mackay’s largest distillery as well as being the flagship for the brand. With four pairs of stills, Dalmore has a capacity of 4.2 million litres per annum, but still retains its quality and character.
The house style is undeniably one of a rich, full-bodied whisky, with orange, chocolate, and coffee flavors.
The Dalmore 12 Year Old
An outstanding single malt matured in American white oak ex-bourbon casks and finessed in rare and aged Oloroso Sherry casks. With its intricate aromas and flavours, The Dalmore 12 is recognized as a whisky with character far beyond its age. Aromas of citrus fruits, chocolate and aromatic spices. On the palate, Seville oranges, dried fruits and hints of vanilla pod. Finish of roasted coffee and dark chocolate.
The Dalmore 12 Year Old Sherry Cask Select
This brilliant single malt whisky was distilled at the Highland’s Dalmore Distillery and matured in American White Oak casks before being transferred to Oloroso Sherry casks for a finishing period. The maturation combination has resulted in a balanced, rich and fruity dram with a unique range of woody spices that linger in the background. It’s a fantastic creation and one that any fan of Dalmore whisky must add to their collection.

The Dalmore 21 Year Old
The Dalmore 21 is a highly limited Highland single malt whisky, presented in a gorgeous limited edition display box, this single malt was first aged for 10 years in American oak, before a final finish in 30 year old first fill Gonzalez Byass Matusalen Oloroso sherry butts.
The Dalmore 25 Year Old
First released in 2013, the Dalmore 25 is matured initially in American white oak before a second maturation in a combination of Palomino Fino sherry butts and first fill bourbon casks. These are then married together in bourbon barrels before a finishing period in Tawny Port pipes.
The Dalmore Quintessence
The Dalmore Quintessence is the first and only single malt whisky in the world with a five red wine cask finish. Master Distiller Richard Paterson travelled to California to hand select the five different casks in which this exceptional whisky would be matured; Zinfandel, Pinot Noir, Syrah, Merlot and Cabernet Sauvignon, each bringing their individual nuances to create a totally unique single malt. The Dalmore Quintessence – the perfect embodiment of a Master’s art.
The Dalmore 30 Year Old
The 2021-edition of The Dalmore 30 Year Old single malt has been matured in American oak ex-bourbon casks and finished in tawny port pipes which previously held Graham’s 30 Year Old Tawny Port. Aromas of candied orange peel, treacle toffee, Morello cherries and warm brioche fill the nose, complemented by notes of Black Forest gateau, Tarte Tatin, Victoria plums, Madagascan vanilla and shaved almonds throughout the palate.
The Dalmore 35 Year Old
2016 marked 50 years in whisky for Master Distiller Richard Paterson, a milestone also marked by a number of special releases of The Dalmore. This 35 year old, just 1,000 bottles of which being released each year for the next five years, was matured in bourbon, Matusalem Sherry and Colheita Port casks. Presented in a Baccarat crystal decanter bottle, the stag is produced by Royal Warrant-holding Scottish silversmiths Hamilton & Inches.
The Dalmore 40 Year Old
The 2018 release of Dalmore 40 Year Old was initially aged in white oak, ex-bourbon casks before being transferred into 30-year-old oloroso sherry casks. The palate is rich and full, notes of coffee, sultanas, dates, gingerbread and maple syrup mingling together before a finish full of blood orange and coconut notes.
The Dalmore 45 Year Old
Highly rare Dalmore, aged for nearly half a century, matured in both bourbon and tawny port casks and blended by the maestro Richard Paterson. Expect those typical Dalmore rich, sweet and complex notes of red fruits, dark chocolate, honey and sticky dates. What’s more, Dalmore 45 Year Old is packaged in a gorgeous Baccarat crystal decanter. Just 500 bottles have been released worldwide.
